Tapa Preparation in General:
We put them together in the class, not cook them from beginning to end as we have a lot to talk about in only one hour. Some weeks will require preparation on your part PRIOR to the class.
Please don’t feel pressured! You can always just watch how it is done & then make the tapa at a different time!
Specifically for April 24th, 2021:
Best to start the PREP before the class.
Also, chill the Rioja & the Ribera del Duero in the refrigerator (about 20 min). Then, about 30 minutes before class, take it out & open it before the session begins!
